DigiKey and Mouser still have literally dozens in stock? Do you need a Gross of them?

People generally only need one, or two, while they fab or prototype their own board. You could also use assort H7 NUCLEO/DISCO boards as a proxy.
The STM32H753I-EVAL(2) is probably due for a refresh using more current parts and a DSI screen.
Also now they have Dual Core and DSI working the H757 probably would be the preferred target-de-jour if you need an H7 with crypto. The H750 also supports in a single core.

In this case is not a matter of product itself, its a matter of longevity.
In the future, which board will be adequate to recommend?

Longevity of what component? ST has made promises that the IC will be available for 10 years.
What specific aspect of the design does the customer actually want to evaluate?
